I cooked this soup with the slow cooker last night then transferred it to my soup pot and boiled it on high heat for another 30-45min. I still like to cook my soup on the stovetop on high heat because it makes the soup become more full-bodied and the chicken bones when boiled on high heat lend a milky taste to the soup - my favourite!
Potato Soup
*Skip the dried scallop and dried cuttlefish for tots below 18mths*
Ingredients:
- 3 relatively small potatoes (skinned and cut into quarters)
- 1 dried cuttlefish (Toast for a few min before adding it to the soup) - alternatively, use dried shrimps if you don't like the soup to be too 'fishy'
- 1 dried scallop (place in a soup bag)
- 1 chicken carcass
- 250g pork ribs
- 3 cloves garlic
- 1 soup pot water
- salt to taste
Method:
- Blanch the pork ribs and chicken carcass.
- Put all the ingredients into the slow cooker and cook 1hour on high then on auto mode for 6-8hrs.
- Transfer the soup and ingredients into a soup pot (if your slow cooker cannot be used on the stovetop) and boil on high heat for 30-45min. (You should be able to see the soup turn from a clear soup to a 'milky' one)
- Sieve the soup. Place the scallop and potatoes back into the soup.
- Add salt to taste.
For toddler's consumption:
- Cut the potato into small pieces or allow the tot to bite off from the adult's portion.
